Healthy Banana Breakfast Muffins

 

Dry ingredients:

1 1/4 C wheat flour

1/2 C wheat bran

2 Tbsp. ground flax seed

1/2 C brown sugar (or sweetener of your choice)

1 tsp. baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. salt

 

Wet ingredients:

2 eggs

1 C mashed ripe banana (about 2 1/2 bananas)

1/2 C unsweetened applesauce (if you use sweetened, just reduce the amount of sugar)

1 tsp. vanilla extract

 

Optional:

1/2 C chocolate chips or nuts

 

Preheat oven to 350 degrees. Mix dry ingredients in one bowl, wet ingredients in another.  Make a well in the dry ingredients and pour in the wet mix. Stir until just combined. Spoon into muffin tins and bake about 12-15 minutes, or until the muffins are set and the tops spring back when touched.
